Insoluble oily liquid can be dispersed into small liquid beads when stirred with high shear force. After stirring, it will be layered quickly under the action of interfacial tension. However, when stirred with dispersant, a stable emulsion can be formed. Its main function is to reduce the interfacial tension between liquid-liquid and solid-liquid. Dispersants are also surfactants. The species include anion type, cationic type, nonionic type, amphoteric type and polymer type. The anion form is used the most.
